Try an authentic home made chicken curry in Thai style. Not sure about your friends however your parents will definitely like it as this will give them the feeling of their childhood food. Keep it spicy or less as per your parent’s choice. Try this for Mothers day or father’s day and enjoy the happiness on their face.

Ingredients
• Thai green curry paste: 20 gm
• Chicken breast: 250 gm
• Turmeric powder: 5 gm
• Palm sugar: 20 gm
• White sugar 10 gm
• Coconut cream: 400 ml
• Salt to taste
• Fish sauce: 2 tbsp
• Thai red chili: 2
• Kaffir lime leaves: 2
• Eggplant (small green): 4
• Pea eggplant: 6
• Capsicum (red, yellow, green): 15 gm
• Basil leaves: 5.

Method

• Firstly boil the chicken properly and keep aside.
• Saute the Thai green curry paste, turmeric powder and Kaffir lime leaves in hot oil.
• Add palm sugar and cook till it melts in the paste.
• Add white sugar and coconut cream together, gives an amazing color.
• Add fish sauce and simmer curry for 5 to 10 minutes.
• Add all other vegetables and leave them to boil properly.
• Before finishing add the boiled chicken and sauté for sometime and final touch of basil leaves.
• Serve hot with rice.
